Vegan Friendly Flaxseed Zucchini Bread
Plant-based diets can have many different definitions. Today we will be looking at a diet that is more suited for those following a vegan diet. So, what is a vegan diet? A person who is vegan, means that their diet is void of all animal-based products, from the meat straight off of an animal to the honey and milk that they make. When switching from a plant-based vegetarian diet to a vegan diet you might be wondering "How can I make my baked goods without eggs?" Luckily there are many substitutes for eggs made available out there if you are following a vegan diet, or you are allergic to eggs.
The main purpose for wanting to include eggs is for its ability to bind the ingredients together, for example, when making a batter for frying or when making pancakes, or for making an emulsion like homemade mayo.
Some well-known substitutions for eggs in baking include:
- flaxseeds aka "flax-eggs"
- unsweetened applesauce
- unsweetened plain yogurt
- bananas
- silken tofu
- vinegar and baking soda
Why would you use a vegetable like zucchini in bread, when you can make banana bread instead? Zucchinis, similar to tofu, pick up the flavors around them because they are so mild. They also contribute a great moist texture to the bread which can be great with chocolate chips too! (Brien, 2020)
Flaxseeds were first introduced the US because of their role in medicine, oil, paper, feeding animals, and making clothing. This changed in the 1990s when zucchinis found their way into the kitchen. There are many nutritional benefits found in zucchinis including the omega-3 fatty acids that improve heart health, they provide necessary proteins, and also have antioxidants, which can also improve heart health. Flaxseeds are useful in baking because of their leavening and thickening properties. (Goya et al., 2020)
So, as you can see, using flaxseed in place of eggs in baking bread will not have any different effect on the final product than it would if you used eggs instead. So why not give this recipe a try from King Arthur Baking! The only difference, in order to make this as was originally written is to use 2 large eggs in place of the "flax eggs", and add raisins, and to sprinkle brown sugar on top. Happy Baking!
Vegan Friendly Flaxseed Zucchini Bread Recipe:
Ingredients:
- 3/4 cup (159g) light or dark brown sugar, packed
- 2 Tbsp (28g) apple juice, orange juice, milk, water, or the liquid of your choice.
- 1/2 cup (99g) vegetable oil
- 2 flaxseed eggs*
- 2 Tbsps ground flaxseeds
- 3 Tbsps water
- 1 tsp vanilla extract
- 1/4 tsp baking powder
- 1/2 tsp baking soda
- 1 tsp salt
- 1 1/2 tsp cinnamon (optional)
- 1 3/4 cups (210g) all-purpose flour
- 2 cups (242 to 300g) shredded zucchini, somewhere between firmly and lightly packed
- 3/4 cup (85g) chopped walnuts, toasted until golden (optional)
*Flax Egg:
- Grind the flaxseeds, if you are not using flaxseed meal
- Mix the water and flaxseeds together
- Let the mixture rest for 5-10 minutes before using
Zucchini Bread:
- Preheat the oven to 350F. Lightly grease an 8 1/2" x 4 1/2" loaf pan.
- In a medium-sized bowl, beat together the brown sugar, liquid, vegetable oil, flaxseed eggs, and vanilla until smooth.
- Whisk the baking powder, baking soda, salt, and cinnamon into the flour, then add the dry ingredients to the liquid ingredients in the bowl, stirring or beating gently until smooth.
- Stir in the zucchini and walnuts.
- Scoop the batter into the prepared pan, smoothing it if necessary.
- Bake the bread for 55 to 65 minutes, until a toothpick inserted into the center comes out clean.
- Remove the bread from the oven, and cool it in the pan for 10 minutes. Turn it out of the pan onto a rack to cool completely. For best results, don't slice until it's cool.
- Store the bread at cool room temperature, well wrapped, for several days; freeze for longer storage.
*Flaxseed eggs can be stored in the fridge for up to 12 hours.
